Eggplant?

I bought an eggplant at the store yesterday and have no idea what to do with it! I don't even know what eggplant tastes like! Any suggestions?

XD Lol, why don't you just try searching for some healthy recipies on the internet? I found this site, which seems to have a lot of variety.

I did the same thing last week.. So this is what i made and omg it was beyond yummy.. even my kids ate it.. they thought it was meat at first lol....

If it's just you then cut the Recipe in half because it makes alot of food but you can always have left overs for the next day...0 -

:laugh: :happy: Im going to the store tommorrow for egg plant I want to try it to I heard it taste great sautee in olive il mixed with squash,spinash,onions and green peppers..most definately going ot try it because I love squash and spinash0 -
Eggplant is almost like tofu what ever you cook it in it will soak up the flavor and taste like it..so if you mix it in with other veggies and some spices it will taste great...0

Yeah. I eat a lot of eggplant and folks are right. Eggplant parmasean and rattatoulie are both excellent recipes. Good luck.0

I usually slice it in about 1/8" thick rounds (peeled), dip in egg thinned with milk, then in a combination of Italian bread crumbs mixed 1/2 and 1/2 with flour (or just flour), then fry in canola or olive oil until well browned on each side (med-high heat), I blot it with paper towels on removing from pan, and add some garlic herb and a bit of seasoned salt, and eat
The other night, i fried some extra lean hamburger with onion and then added a jar of tomato/mushroom sauce and let it simmer. Then i layered the already fried eggplant, alternating with sauce and some cheddar cheese sliced thinly. Baked at 350 degrees until bubbly. YUM!! May not be the most low on calories, but sure is good!!0 -

Thank you! I really liked the Eggplant Parmesan, but it would be great to be able to cut this up and just use it in whatever! It's a fantastic veggie! Can you eat it raw?0 -
I grilled mine on the grill with olive oil, garlic, salt, and pepper. Then I brought it in and topped it with parmesan cheese and marinara. It was so good!!! Took basically 5 minutes and it was really low cal! It was the first time I had it too and I was pleasantly surprised...0

Then there's this favorite chinese spicy eggplant recipie that I love. But that should be saved for a day when you need to add calories to your daily intake. But it is de-lish.
And then there are all these wonderful panini sandwiches that you can make, and often roasted or grilled egg plant is the starring role in these sandwiches.
Careful with the use of oil, egg plant will soak it up like a sponge. I usually use a spray olive oil, so I don't over oil the dish.0
