Recipes for over ripe bananas please!

I've two bananas which are a bit past their best and I need some recipe ideas. I don't have any flour in but I do have oats. What would happen if I just mixed the two together and baked them in muffin trays? Delicious or horrible?

My only thought is to bake one for dessert but that's a bit boring. Would be good to do something that will keep for a couple of days or to take hiking at the weekend.

Recipes please (without sugar and flour as I don't have any in stock)!

    I actually like them slightly cold, almost frozen! Not as mushy then.

    If you tried the oats, maybe grind them up in a food processor first?

    Mash them up and freeze them, eat like ice cream. You can add fresh fruit, peanut butter, cocoa....what ever.

    Sometimes I mash half a banana and cook it in my oatmeal- add some spices and it's perfect!

    Banana ice cream is fantastic too! Slice and freeze the bananas (I would put one banana per bag). Once frozen place in a food processor with a splash of milk and mix for a while. Keep mixing until it has the consistency of soft serve ice cream. You can add a splash of vanilla, peanut butter or a few chocolate chips- yummy! Google banana ice cream and I'm sure you will be able to find some great recipes!


    You can also peel and freeze bananas for a later use:)

    I mix mine with a little coconut milk and add raw cacao nibs (dark chocolate would work too). SO GOOD.

    I always just make smoothies with overripe bananas. Strawberry, banana and Greek yoghurt is my current favourite

    Make into a smoothie with a couple of teaspoons of cocoa powder and the liquid of your choice eg almond milk, milk, soya milk, water.

    Bake them.
    Wrap in silver foil (in their skins) for maybe 20/30 minutes then carefully open the foil parcel, leave the banana in the foil, peel a bit of the skin back or cut along the length to open up the lovely sweet gooey stuff inside. Sprinkle some brown sugar/sweetener on or as a real treat splash a bit of your favourite liqueur over. Absolutely delicious. :)

    The Chiquita banana site has some good recipes based on the ripeness of the banana. Overripe bananas are the best for smoothies in my opinion because they are the sweetest.

    Love the idea of adding alcohol to baked bananas - dark rum would be amazing.

    Smoothies - great breakfast idea.

  • Sugar Free Banana Muffins
    Ingredients:
    3 lg. bananas
    1 tsp cinnamon
    1 egg
    1 tsp. baking soda
    1 tsp. baking powder
    1/2 tsp. sea salt
    1 1/2 c. organic whole wheat flour
    1/3 c. melted butter
    Preparation:
    Mash bananas.
    Add cinnamon and slightly beaten egg.
    Add melted butter.
    Sift dry ingredients together and add to above mixture.
    Mix until moistened.
    Bake at 375 degrees for 20 minutes.
    This makes one dozen muffins, which go great with coffee in the morning, or are ideal to put in a lunch for later that day.
