Oklahoma and their food... kind of an odd question!

So I am from NJ, and recently took a trip to Tulsa, OK with some friends. I fell in love with that city for its simplicity but also its FOOD! I was there for 4 days and ate normally, didn't stick to any diet, and lost 3lbs.
Those of you from the Midwest, is there less processing and chemicals in the food? I had to wonder because I ate as I do here, and never drop weight from it! My two friends I went with lost a few lbs as well. so I am pretty curious of this!
