I just saw a recipe today on the Rachel Ray Show (I had a rare day off and was in the waiting room at the doctor's office). She made Cheeseburger Eggrolls. They looked amazing. I don't have a calorie count but if made with lower fat beef, lowfat cheese, etc. I can't imagine they're too horrible. They were baked, not fried.

These are two quick and easy ones I have made recently:
1 pd hamburger borowned with one diced onion in large skillet, add 1/2 head finely chopped cabbage cook until desired doneness, stir in 1.5 c fresh salsa (or 1 can dices tomatoes), season as like. I added pepper adn garlic powder, could serveover brown rice we just had as is.
1 pd hamburger browned with one diced onion in large skillet, add 1 can dice tomatoes, 2 cup frozen corn, one can chili or black beans, cook until bubbling, add 1/4 cup ketchup or BBQ sauce, 1 tbsp A1 and season as like. I added chili powder. Cook until slightly thickened, place in casserole (top with cheese, I left off... to many calories) top with I can refrig biscuits and bake 350 unitl bisquits golden.0 -
i'm working on making these right now. So far the cal count for one seems like it's going to be pretty low....
