Homemade Pickles with low sodium
Options
I am a pickle fanatic.
I make pickles at home, so I can eat guilt free without the sodium. Seems that most of my friends have been stealing them lately, so I figured they must like them enough that it is a worthy share:
Sliced cucumbers (to your preferred thickness)
Apple cider vinegar
Salt
Water
Use a tupperware or jar to fill 1/4 full of apple cider vinegar, 1/4 water, few pinches of salt....mix then add cucumbers (make sure they are all covered in the brine)
Leave for AT LEAST 2 hours....
Enjoy.
Adjust to your taste....I like mine not too flavored.
