Pork Loin Recipe

OK MFPers. I have a 4.5lb Pork Loin. I need some healthy recipes. There are a few conditions:
1) No Bell Peppers
2) Makes many servings
3) Reheats well

My wife and i make one meal then eat it over several days. Please help me out with some new things.

    healthy recipes? Dont buy pork loin lol? its loaded with fat.

    But I LOVE pork, so I dont care.

    I always put it in the crockpot with seasoning and then chuck some whole cored apples stuffed with brown splenda dried cranberries on top. then you get a amazing pork and applesauce. or if you watch it carefully you get amazing baked apples thats are relatively healthy. not good for a bulk cook though as i don't know how well apple sauce freezes

    pulled pork. Throw it in the crock pot with a can of ginger ale and some onions. When it's done shred it, place it back in the empty crock pot and add your favorite sauce. If you google slow cooker pulled pork you'll find a bunch of variations.

    put it in the oven with salt and pepper. make a gravy out of the drippings with flour and water.

    Cook with pepper, garlic, whatever seasoning you like. Shred meat and use it for BBQ pulled pork sandwiches, and quesadillas or tacos with lowfat cheese.

    have a grill with a spit? My dad salts and peppers a pork loin and puts it on his rotating spit and lets it cook.

    My mom puts it in a crock pot with some water and cooks it. One day just pork roast with sides. Next she takes some for pulled pork. Any left she puts in a soup.

    Guess what I said probably wasn't the healthiest, but it's still really good in the oven with or without the gravy haha

    Heya-
    I like to
    1.season lightly with a bit of salt and pepper
    2. slit it in several areas and stuff garlic clove into the slits
    3. Rub it completely with a Jamaican Jerk Paste (paste, not powder) and a little bit of evoo
    4. Let it marinate wrapped tightly in several layers of aluminum foil.
    5. Place it on the grill and walk away until the pork is up to temp......

    I PROMISE IT'S EASY AND TASTY! I LOVE JERK PASTE. YOU CAN GET IT MILD OR SPICY!!!

    Bunch of that sounds really yummy. Loin's pretty fatty, but probably one of my favorite cuts. Plus we can eat on it for a while...spread the badness over multiple meals.:wink:

    Pushnhard, about how long it take on the grill, and how high you turn it?

    Trim the fat, then make a rub with the following (I use a food processor but you can chop if you like) olive oil, garlic cloves, rosemary, sage, thyme (all fresh) salt and black pepper, coat the loin and roast. We just made this for a luncheon and everyone loved it, it reheated well also

    So sorry. I'm sure you have cooked it already...I simply left it on the charcoal grill for about 2.5 hrs. You can also bake it t temp....I just love anything off of the grill

    Pork in the crock pot and shredded... OMG, so good! I like adding BBQ sauce or a marinade, and having it with baked potato (with a squirt of ranch dressing) and green beans.

    This recipe below is really good. You could easily double or triple it and slice the loin into chops. You could also just sear the loin and after you return it to the pan you can finish it off in the oven.

    Pork Chops and Peaches
    adapted from: paleoblocks

    Ingredients:
    1 T olive or coconut oil
    4 boneless pork chops or bone in, about 2 pounds
    sea salt and black pepper
    2 fresh peaches cut into wedges
    1 small red onion cut into thin slices
    3 T apple cider vinegar
    1/2 cup fresh basil leaves

    Directions:
    Heat the oil in a large skillet (cast iron is ideal!). Season the pork with salt and 1/4 t pepper and cook until browned and almost cooked through (should feel firm to the touch), set aside.
    Add the peaches, onion, vinegar and salt and pepper to the skillet and cook until peaches and onions begin to soften.
    Return the pork and juices to the skillet. Reduce heat to low or medium low and cook for about five more minutes, or until pork is finished cooking and peaches and onions are soft.
    Sprinkle the pork and peaches with the basil and enjoy!

    Make the green chili if you can.
    Be much better than a jar stuff
    Lot's of things to do once completed...
    Burritos,w/rice and beans, w/eggs.

    The pulled pork is a great idea as well. I do that quite a bit.
