Looking for a healthier pasta salad

Hello :flowerforyou: This weekend I am going out of town with my parents. My mom makes THE BEST pasta salad you could ever eat, and you can't NOT eat it! :laugh: Any time it is around, I eat waaaaay too much of it and bloat like a hot air balloon. I would like to make my own version with whole wheat pasta, and vinegar instead of italian dressing. Does anyone else have a great "healthy" pasta salad recipe?

    i like a greek/ Mediterranean style pasta salad, whole wheat pasta, cherry tomatos, cucumbers, peppers if you like, red onion, and then a low cal greek or mediterranean or even italian dressing in a crunch...

    OH and don't forget a lil feta if you can afford it in you cals!

    I was given an awesom chick pea salad.
    I can of chick peas -rinsed and drained
    half a cucumber seeded and chopped
    1 red pepper chopped
    1/2 red onion chopped
    8 cherry tomatoes cut in half
    1/4 cup crumbled feta

    Mix together 2 tsp of olive oil, juice of 1 lemon, 2 tbsp parsley flakes and 3/4 tsp of garlic powder.

    Toss the oil/lemon dressing through the veggies.

    Let it sit for a while and it is even better the next day
  • I don't have a particular recipe. But I love to load my pasta salads with LOTS of veggies. Its my way of getting my husband to eat the veggies he hates. I put in broccoli, cauliflower, carrots....Anything left over in the fridge..Get creative. Rather tha n putting in the cheeses and meats, I put in all veggies. :laugh:

    That does sound good!

    Any other ideas? I am thinking I will get Whole Wheat Pasta, Chicken Breast (grilled and small chunks), Red Onions, Cucumbers, Celery, and then just use vinegar and EVOO as the dressing... Sounds healthier than White Pasta, Cheese, Veggies, and LOADS of Italian Dressing, RIGHT??

    Don't forget - you can also substitute Kraft Free Italian for the normal italian dressing.... think it has less than 25 cals per serving. I use it on my pasta salad :bigsmile:
