    I love raw cucumber in light raspberry vinaigrette.... OR.... marinated in apple-cider vinegar (Yum)

    Grate one cucumber into a cup of fat free Greek yogurt, and chop up some garlic and mint. Add a little lemon juice, salt, pepper. Delicious!

    cucumbers sliced , onion, cherry tomatoes , pinch of shredded cheese, light ranch dressing drizzled then stirred through out to give a light coat. yummm
