Fruit cake , almost no fat, no refined sugars
Made this today and tried it out on my friend who has a massive sweet tooth and she said it was yummy so thought I would share as it has no added fat or refined sugars. Breakfast carbs for me for quite a while!
Serves 32
Ingredients:
357g ready to eat prunes
6 tbsp orange juice
4 large eggs
4 tsp vanilla extract
350 g plain white flour
2 tsp baking powder
1 tsp ground mixed spice
750g mixed dried fruit
6 tbsp skimmed milk
Per portion: 137 cal, 32 carbs, 1 fat, 3 protein
1) Heat the oven to 180 degrees Celcius (350 F) Gas Mark 4. Line a deep 23 cm (9 inch) round cake tin with baking paper.
2) Puree the prunes and orange juice in a food processor until smooth and transfet to a large bowl.
3) Add the eggs and whisk until pale and fluffy.
4) Sift in the flour, baking powder and mixed spice into the prune mixture.
5) Add milk and fruit and gently fold in with a metal spoon. Add more milk if necessary to achieve a dropping consistency.
6) Spoon into the tin and bake in the centre of the oven for 45 minutes. Reduce the oven temperature to 160 C (325F) gas 3 and continue baking for another 1 hour 15 minutes. If the top gets too dark place a piece of baking paper over the top.
7) After time allocated test the cake is firm to the touch and insert a skewer to see if it comes out clean.
8) Remove from the oven and leave to cool for 10-15 minutes before turning out on a wire rack to cool completely.
