Taking off breading

Even when not dieting, I've never liked as much breading as often comes on things like chicken sandwiches or chicken fingers. I usually peel as much off as I can. Sometimes that's all of it, sometimes it's half or less.
KFC lists their chicken both as it comes and with the skin and breading removed. Almost no one else does this. Taking off breading should not only reduce the calories, but change the proportions of carbs vs protein. Has anyone out there ever come across information on the breakdown of nutrition facts for various breadings themselves?
I swear, some days I just want to go out and buy a bomb calorimeter and start testing these things myself! ;-)
