Vegetarian In Need of MINION. F4MF

Smokin' female fitness junkie in need of minion to plan high protein vegetarian meals!
Seriously, though, I am struggling here and I'll take what I can get in terms of recipes, advice, meal planning. I spent a fair amount of time trying to figure out my TDEE and have settled (finally!) on a goal of eating 1600-1800 cals a day, and NOT eating exercise cals (I work out 3-5 x's a week, but I also have a desk job). My bf% is currently 20%, my goal is to get to 17% bf (to see my abs!).
My big problem is I regularly FAIL to hit my macros (protein at least 30% is my goal, carbs no more than 40%)...
Anyone able to create or share a vegetarian meal plan that is approx 6 meals a day (or 3 meals, 3 snacks), no more than 1800 cals a day, and has 60-90 (and shoot for 90) grams of protein per day? I usually use 2 protein shakes (171 cals, 14 carbs, 26 protein, 2 fat).
Another problem: I have a sweet tooth issue. If you have any low cal, high protein sweet recipes (I can use xylitol as a sweetener!) please please share. Extra points if you have a cheesecake recipe.

Tosca Reno has just put out a vegetarian version of Clean Eating. It will have meal plans and she balances proteins with carbs.0

Ok, I found this recipe for quiche...i'm going to make a vegetarian version of it: http://fluteangel.wordpress.com/2011/06/17/high-protein-recipe-quiche/
It's gonna be: 3 eggs, 3 egg whites, 1 package of gimme lean sausage, 4 smart bacon strips, 1 cup of spinach (from my garden!) and 1 onion chopped, and 1/4 c cheese. 2 servings is 325 cals, 22 crabs, 32 protein.
The trick is: no crust. ahhhhhhhhhh! NO CRUST! I suspect it will be delicious anyways.
I also am going to start eating tofu and tempeh and seitan like its steak, with veggies on the side. 1 block of tofu is 225 cals, 5 carbs, 27 protein. Westsoy seitan has 225 cals, 8 carbs and 45 protein.

Silken tofu when blended on high speed turns into a mousse like texture. Add cocoa and a little instant coffee--or blend with vanilla vegan pudding! With the base you can do pretty much anything--fruit etc.
Also, edamame is great for snacks-microwave and sprinkle on garlic powder or salt and pull them out of the pod with your teeth. YUM!
Tofu will do pretty much anything you tell it to and extra firm (well drained) can sub for chicken in just about any meal. You can even bread it with crumbs of panko.
My daughter in law is encouraging me to try quinoa--you might search for recipes for that, too.
