Help me decide on what I need to eat - Training Mode

Hey,
I'm really hoping you amazing lot will point me in the right direction. Yesterday I started training for a 75km/4 to 6 hour mountain bike race/challenge. So I decided to cycle home, along our disused railway, which would be counted as mountain biking (seriously the terrain was awful!!) and I earned roughly 1306 calories which is less than 100 shy of my overall calories for the day and I got really stuck on what foods I should be eating.
Now if this was a one off I wouldn’t worry too much but in a couple of weeks I will be making the trip into work and out of work 5 days a week, which will mean I will earn over 2500 calories a day not including my daily balance. This does not include my weekly kettlebell class (691kcal), swimming (864Kcal) once a week, the gym at lunchtime (I'm hoping to start TNROLFW) oh and walking the dog, around a hour a day and the allotment!
Does anyone have any ideas on what foods I should be eating at times like these, I'm going to invest in allot of nuts and fruit/veg, but apart from that I'm really stuck!

Hi hows it going, you can check out my diary. I burn about 1300 calories per day cycling.
My snacks are usually within 30 mins of finishing cycling0 -
