Low-cal Poppy Seed Chicken Casserole
Number of Servings: 4
Ingredients
1/2 cup fat free sour cream
35 reduced fat Ritz Crackers, crushed
1 tablespoon poppyseeds
10 ounces cooked chicken breast
1 can cream of chicken soup (98% fat free)
Directions
1. Mix together sour cream, cream of chicken soup, chicken, and poppyseeds. Also mix in 20 of the crushed Ritz crakers.
2. Pour into greased 8 x 8 casserole dish.
3. Sprinkle remaining Ritz cracker crumbs on top.
4. Bake at 325 for 25 minutes or until heated through.

I eat 5-6 meals per day and have the hardest time with having protein on hand for a quick meal. I cook and freeze big batches of turkey pesto meatballs or turkey burgers. It makes getting protein quick and easy when I'm in a rush.0

I make soups every week from chicken stock ... on a sunday we have a roast and I boil the carcass for 2 hours then take out the bones and put back in the bits of chicken, I add some carrots, parsnips, potato, onion, leeks, butternut squash, peas, sweet corn and maybe rice or pasa if you dont have (or like) all of the above just add what you have or like the taste of.....
it freezes very well I do it all the time .... sometimes I make make spicy chicken noodle where I add chillies noodles red peppers, onion and the boiled chicken that also freezes very well .... you can add extra stock cubes (chicken or veg or both) so that you can add water and make a bit more

I make homemade tortilla pizzas and freeze them with layers of wax paper between them.
I'm on a sodium restricted diet so I make my own pizza sauce, spread it on a tortilla, add low fat mozz. cheese, chopped red, yellow & orange bell peppers, seeded and chopped tomatoes and mushrooms. You can use any toppings!
I then freeze them on a big cookie sheet. Layer them on top of each other with the wax paper between them or slide frozen pizzas into gallon ziploc bags.
Bake at 415 degrees on a preheated cookie sheet for about 15 minutes, or til the center is heated through.
You can vary the caloric content by the size, type of tortillas you use and if you use meat or not. I love, love these little pizzas and they are perfect for lunch or dinner.0 -
Water is an excellent thing to freeze if you want to make ice cubes!

If you like Indian/Arabic cuisines, checkout my blog. Everything there except Biryani is healthy dishes and everything but Fruit salad and aloo ki subzi can be fronzen. I freeze alot since I'm a single guy and cook only in bulk. Hope this helps0

I'm big on making huge batches of soups and freezing them. My favorite is Chicken Chili (http://restaurant.food.com/recipe/chilis-southwest-chicken-chili-338745). To make it easier to cook, I use a rotisserie chicken I chop myself. It freezes beautifully and can even stay in the freezer for a long while. Then whenever you need a fast dinner, plop the frozen soup into a pot and in about 30 mins you've got dinner.0

Chocolate overnight oatmeal
You will need:
1/2 cup oats
1/2 unsweetened almond milk
1 scoop chocolate whey protein powder
2 tbsp. unsweetened baking cocoa
1 tbsp. stevia
1/2 banana (sliced)
1 tbsp. unsweetened carob chips
Mix this all together( all but the banana and the chips) then put in the fridge the night before ( make sure you cover it) Then take it out when you wake put the banana sliced on top the the chips.....yummy tastes like a no bake cookie0 -
