I make mini pies all the time.
I use reduced fat crescent rolls for the crust.
Unroll the container and divide into 12. I roll out each into a circle and put into a well sprayed muffin tin. If it's a pudding pie, I bake at the temperature on the package. (bakes 7-11 minutes) If it's a fruit pie (like apple of blueberry) I do not prebake the crust.
These are the perfect size for a dessert.
I've used this for all sorts of puddings, pumpkin, apple, blueberry. This weekend I was going to try the new Philly white chocolate cream cheese with fat free cool whip in the prebaked pie crusts for mini cheesecakes.0
