I need quick and easy ideas for summer lunches that are kid friendly. This includes both take with us and fix at home. I would prefer it not to take more than 5-15 minutes to make.

Pasta salad... tricolor rotini (we use the ronzoni veg pasta), italian dressing, cheese and everyones' favorite veggies (my kids like cucumber, tomato and ham in theirs)
cucumber sandwich... 2 slices whole wheat bread, half a cuke sliced up and hummus (works well in place of mayo)0 -
When my kids were small, they liked it when I made their school sandwiches out of Tortillas or a half pita instead of regular sliced bread. I'd fill them with their favourite sliced meat, a slice of cheddar, and a few cucumber slices. Other peeled and cut up veggies made the bag, along with a small container of Ranch Dressing. And oatmeal cookies were never thrown out, either!
For home, they were always excited when personal pizzas were on the menu. I would pull out whatever I had on hand (even using tortillas for the crust) and they would choose their own toppings.0
