Hot day/Quick meal?

When the heat has sapped your strength and the idea of being in a hot kitchen isn't thrilling you -what is your go to recipe?

Tonight I made:
Poor Man's Caviar

2 large avocados - peeled, pitted, and chopped
3 plum tomatoes, chopped
1 bunch green onions, chopped
1 (14.5 ounce) can black beans, rinsed and drained
1 (11 ounce) can Mexicorn, drained
1/4 cup red wine vinegar
1/4 cup canola oil
hot pepper sauce to taste

Mash, mise & mix the ingredients together. It was a crowd pleaser @ 267cal/serv!
Serve with tortilla chips.
I think I'll try eliminating the oil next time -that will drop off about 50cal per servings
