I made this today... Yummy!...
Ingredients
1 1/2 cups whole wheat flour
2 tablespoons ground flax seed (flax meal)
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon baking powder
1 egg
1 cup sugar
1/4 cup brown sugar
1/2 cup oil
1 teaspoons vanilla
1 1/2 cup grated zucchini
1/2 cup grated carrots
Directions
Mix dry ingredients in a bowl and set aside.
In a separate bowl, beat egg and add sugars. Then add oil and vanilla and mix until smooth.
Stir in vegetables.
Add dry ingredients.
Pour into greased bread pan. Bake 45-55 minutes at 350 degrees until an inserted toothpick comes out clean.
I put the recipe in calorie count and heres what they got as far as nutritional info... this was based on 15 servings... you could probably get more though...

Sounds delicious. I was going to make it but I don't have flax seed-so I'll have to buy some. Thanks for sharing the recipe.0

Hmmmmm. Sounds Delicious
.
I made banana bread the other day with applesauce. Still turned out to be 150 C a slice. Can't we get in down in calories any further? These types of breads are so good & I can't just have 1 piece.
I will have to try this recipe. Thanks for sharing:drinker:0 -
