Cooking for 1

I am so stuck, usually i dont eat dinner because cooking for 1 is impossible. every reciepe i see is for 4 servings or more.
I will even take 2 servings. then i can have for lunch next day

SO help i need easy recipes for cooking for 1/2 servings.
i am so picky to .. chicken- turkey-shrimp and talapia..

HELP

    If you see a recipe for four servings, halve the amounts and voila -- two servings.

    I usually cook a regular sized batch of something and then eat it all week. I find that works best for me because I don't need to worry about cooking each day. When I was cooking for my boyfriend as well as me I would make a regular batch and freeze half because he did not like to eat the same thing two days in a row.

    I'd recommend http://emeals.com/ It's subscription based, but it's only like $5/month, gives you a menu, shopping list, etc, and they have meal plans for 1-2 people. Also they have options available to tailor your meals towards clean eating, gluten-free, low carb, and others. Very easy recipes, and well worth it when your stuck on what to fix for dinner. :smile:

    1. Take a piece of your chosen meat (chicken breast, fish etc)
    2. Cook it - either marinated and grilled, or poached, or steamed
    3. Serve with a pile of vegetables or salad. I keep some packets of frozen veg in teh freezer, so it's really easy just to cook one handful as a single portion.

    I often cook things that freeze well in portion sized containers. That way I don't end up eating the same thing for a week.

    If I buy an ingredient that will go off if not used, I try to use it for two different types of meal that week.

    And yes, I just adjust recipes to get less servings out of it, whenever possible!

    I am only one and cook for myself all the time. Usually dinner, then lunch, then maybe lunch or dinner the 3rd day. A lot of the times I'll freeze enough for a meal or 2 later...makes for an easy meal on a lazy day.
