My mom has a HUGE garden but this year has not been great for the tomatoes. I was thinking of trying to develop a recipe that is healthier than the usual Fried Green Tomatoes with white flour in canola. Ew.
I might try 'breading' them with ground flax seed after dipping in egg, then just baking them - the way I do eggplant for eggplant parnesan, but I was wondering if anyone else has any ideas about what to do with Green Tomatoes?

You can make your own bread crumbs (grind wheat bread 2 slices or what every you find that suits your needs) put in a bleader add parsely and some garlic you can also put Mrs. Dash in it) ground away lay out on a foil coverd baking sheat toast in a 300 degree oven for about 20 mins let cool. you have bread crumbs this make quite abit you can store it in a covered container. you could addd flax seed to it before toasting too.0
