Freezer food

I'd like to take a food dish over to my best friend that just had a baby so that they can have some easy dinners without resorting to take out. Does anyone have any good recipies that freeze well? Before you say it, I suck at making lasagna, so that won't work:grumble:
It could also be something that doesn't have to be frozen but could keep in the fridge for at least a few days, in case they don't get around to eating it right away. Any ideas?:happy:

Hungrygirl.com has tons of waist-friendly recipes. There's one there for fried rice that I recommend, just add some chopped chicken for protein. It will keep in the frig for about 3 days and can be frozen too!

This is probably terribly unhealthy salt/caloriewise but it's easy and when I was first breastfeeding, I looooved it. I was starving, and it did the trick. LOL I sometimes even added MORE cheese to it.... :noway:
It will feed a family of 6 for dinner with 2 single sized-lunches leftover. You can also 1/2 the ingredients, and just use a small can of cream-of-chicken soup.
Ingredients:
2 pkgs chicken Rice-A-Roni - prepare as directed (or.. I always leave out the margarine.. it browns just fine without it if you keep a close eye on it). Make it in a LARGE pan, you'll need the room later. :flowerforyou:
1 family-size can cream-of-chicken soup (as-is... don't add milk. )
4 large boneless, skinless chicken breasts - cooked and cubed (or if you're short on time, you can use a large can or two of chicken - just drain it first)
1 package of frozen veggies (broccoli is my fav, can also use mixed veggies, your choice on what you think they'll like)
1/4 to 1/2 cup Parmesan cheese
Make the rice-a-roni, mix everything else in the same pan except the parmesan cheese - stir well. Spread it into a casserole (9x12 works fine, or one of those medium sized foil pans with lids that you can throw away), sprinkle it with the parmesan cheese.
Freeze or refrigerate it - it keeps well for 3-5 days in the fridge or freezes for up to 6 months....
If frozen, thaw it before baking.
Bake at 350 degrees uncovered for about 45 minutes.
YUMMMMMY. :bigsmile: You can also add a french loaf and/or a bag of salad if you want to make it fancy. There are even garlic loaves that are in the freezer section at the grocery store....0 -
