Im talking Cajun

Hi everyone

I am a shocking cook, however I can just about manage to bake a few ckicken wings.

1) How do I make a decent cajun rub/seasoning for them

2) A good sauce to dip them in? Franks and Mayo/Cream Cheese?

I ain;t scared of a big of heat

    garlic, chilli, cumin, smoked paprika, oregano is the basis of mine bash it all up with some lime juice and coconut oil.

    I make this great marinade for my wings prior to a rub that consists of fresh chopped jalapenos and about 1/2 can of orange juice concentrate and roasted minced garlic. Im in favor of piercing the skin if you're going to eat that part so the flavor gets in there really well. For a dip to go with these, I would probably stick to something really simple like a jalapeno/chive non-fat greek yogurt dip.

    Also, for good wings, I've simply mixed Louisiana Hot Sauce, an extra few tbsps. of apple cider vinegar and fat free margarine.

    I don't do a lot of dry rubs or the like because of the texture. I like my wings slippery :drinker:

    Coming from Mississippi, Tony Chachere's and hot sauce are a must. We add it to EVERYTHING! Tony's is kinda like a spicy mix of flavors. That and add hot sauce in it. I'd rub the wings in the tony's and a few minutes before they're done baking/frying or whatever, top it off with Hot sauce.

    I'm actually cajun and nothing that is in either one of these post is "cajun" cooking. They dont really eat "chicken wings" as dish.

    My whole family and myself, from MS and LA all live off of it as seasoning. Wings are in no way cajun, but the flavor is. But also, everyone is different. I'm MS Cajun and some LA too.

    Hot wings may not be a traditional dish, but cajuns don't waste anything. If you don't have access to premixed cajun seasoning, make your own. Salt, pepper, cayenne pepper, garlic powder, onion powder is the usual base and you can add anything else you prefer in there. You can't get a more cajun hot sauce than Tabasco.


    Off the top of my head, premix cajun seasoning is Tony Chachere's, Zatarains, and I think Slap Yo Mama. I'm sure there are others.

    Well if you want the "cajun" taste i think your going for (what everyone is use to) then like a previous poster posted, go for tony chachere's is a go to way to kick things up a bit. Are you frying them or baking them?

    Love it. Bro was over there, made him bring me back Lousianna hot sauce. Can;t get it here. Have Tabasco(for the bloody marys) and Franks(for everything)

    True, but i think OP is going for what most americans THINK is cajun...so tonys would work.

    Yeah, it's kind of like mexican or chinese restaurants around here. You think you're getting the real thing but you've missed the mark. :wink:

    Yes!! My family is from Louisiana and we put Tony Chachere's on ABSOLUTELY EVERYTHING. Best spice out there!! I was THRILLED when stores up here in MA started stocking it and I didn't have to order it from Cajun Grocer anymore :laugh:

    I tried making my own once and it was fine.. but not as good as stuff i bought. i think i'll stick to that. tony caccheri? if forget his name. yummy... i did some on grouper on the gforeman t'other day. awesome

    ^^^ THIS is cajun. And if you can find it - DZO's seasoning is great. Made in South Louisiana.

    This isn't cajun, but I love hot wings and I make them at home.

    Take frozen raw chicken wings and boil them until they float in the water.

    Put them on a rack that is sitting on a sheet pan (i cover the sheet pan with foil for easier clean up)

    Broil them for 10-15 min on each side, really close to the burner, until they are crispy but not dried out.

    Sauce is any hot sauce i have (usually franks), i also add cayenne pepper, pepper flakes, habanero sauce, garlic power and onion power. I get it as hot as I can. Mix that together and heat it up.

    When the wings are done, i coat the wings in the sauce and use ranch dressing to dip them in.

    YUM!
