Breakfast/Snack: Hawaiian Ambrosia
While in Hawaii recently, I enjoyed the easiest but tastiest breakfast:
HAWAIIAN AMBROSIA:
Halve a pineapple, scoop out the fruit leaving the shell intact.
Chop into bite-sized pieces, and mix together whatever fruit you have on hand:
- Banana
- Apple
- Papaya
- Grapes
- Nectarine / Peach
- Strawberries
- All berries
- Orange
- Pineapple
Fill the pineapple shell (or use a bowl) and top with a large scoop (around 3/4 cup) of 1% cottage cheese and top with 2 tbsp shredded sweetened coconut.
My calculations, using 1% cottage cheese should be somewhere around 380 calories, 20 grams of protein.

I have never been a fan of cottage cheese with fruit.....but this might be an exception

Something about the coconut makes the cottage cheese more edible... I was never a bit fan of either until I had this. I thought it was a vacation love thing, but it tastes just as good at home0
