I have a bootcamp class at 7pm at night, and I don't get home til 8:30, I'm wondering should I just go to bed hungry or is there a smart snack that I should be having? I also skip dinner cause going to workout with a full belly kind of sucks

Never go to bed hungry! If you skip dinner and then workout your body will go into starvation mode, which you don't want if you're trying to lose weight!
Maybe have a light snack an hour before you go that's high in carbs? By the time you get there you won't feel full, and the carbs will start releasing energy to keep you going! Then have some protein as soon as you get home to fill you up, even if it's just a grilled chicken breast with a light salad.
Here's some more information on eating after a workout http://www.active.com/nutrition/Articles/Get_enough_protein_after_your_next_workout.htm

Have your normal post workout meal. Just because it's late doesn't mean you shouldn't eat and no, everything you eat won't instantly turn to fat because you're sleeping. If anything, your recovery will be helped by having protein and carbs available while your muscles rest and replenish themselves.0
