    I have a recipe that's very similar, except it calls for 2 ears of fresh corn, sliced right off the ear, and instead of tomatoes, green peppers, onions and spice, I use fresh pico de gallo from the market. A little lime juice as dressing--fantastic! I eat it plain, but the boys in my house eat it as dip on nacho chips.

    Great recipe! I make the same but a little differently and my husband & I like it over lettuce and/or tortilla chips (no chicken)

    kernels cut from boiled 3 ears of corn
    1 cup black beans (cooked, rinsed, and drained - no salt added)
    1 red onion, chopped
    1 avocado, chopped
    1 tomato, chopped
    cilantro
    lime juice

    I like to make it a day ahead so the flavors can meld, and throw in the avocado at the end before serving.
