Whole Grain Pasta- Veggie Salad

This is an easy and fast Veggie loaded Whole Grain pasta salad that can be served as a side dish or as a main course with some added protein. I like to serve with grilled chicken or shrimp.

HODGSON MILL-Whole Wheat, Whole Grain Bow Tie Pasta
1/2 bag of frozen broccoli florettes (fresh and lightly steamed would work too)
1/2 of cucumber, thinly sliced or chopped into cubes
2 green onions, thinly sliced
Aprox. 15-20 cherry tomatoes, cut in half
Aprox. 1/4 C fresh parsley, finely minced
Aprox. 1 TBSP minced fresh mint
1/4 C. Extra Virgin Olive Oil
juice of 1/2 lemon
1 TBSP clover honey
sprinkle of crushed red pepper flakes
sea salt and fresh cracked pepper to taste

Cook pasta according to package directions (I like mine al dente). While the pasta is boiling chop all of your veg and herbs, set aside. In a large bowl mix olive oil, lemon juice, honey, pepper flakes, salt and pepper. In the mean time pasta should finish cooking, drain and let cool slightly while finishing veggie chopping or dressing prep. Once all is prepped mix the pasta and veggie-herb combo into the large bowl. Cover and refrigerate for at least 30 minutes (the longer it sits the more flavor!)
