bday party problem

There are a crazy amount of birthday parties I get invited to in June. Is it rude to turn down cake and ice cream? I'm not a big fan of it anyway but it seems like I have birthday parties every weekend. I'm from Wisconsin and we like our food and drink here, so its bad enough with all the food and the proportions but then they give me a huge slice of cake and lots of ice cream. The way my parents raised me is if someone offers you something they went to the trouble to make you take it and eat it all. Is it rude to flat out turn them down or would it be better to ask for a small piece even though I don't want it at all? And is it ok to use the excuse I'm on a diet?

I wouldn't take it as being rude, but if it would make you feel better when they are not looking put it in the trash.0
