Hypoglycemic Breakfast for camping! Ideas?

Hi!!
I'm hypoglycemic, so I'm really sensitive to what I eat for breakfast. Really the only thing I've found that I can eat that doesn't send me into a crash, is eggs or quinoa. Most of the time I eat 1/3 cup of quinoa with cinnamon and splenda sprinkled on or breakfast.

Next week we're going camping for an entire week at a music festival. Making quinoa every day would probably be a royal pain in the butt. I can't have anything with even a speck of sugar in it for breakfast.

Anyone have any ideas for something easier?

    I'm not hypoglycemic, so I am probably not much help, but I am confused. You can't have sugar for breakfast? I'll be honest, I had to look up what Quinoa is, but it look like it has a pretty good amount of starch carbohydrates (along with a lot of protein - I might have to try this!). So are you just trying to avoid added sugar?

    In other words, what kind of carb/protein profile are you trying to accomplish, and maybe some ideas will start coming through.

    yoghurt with almonds and chia and/or flax seed perhaps.

    I assume you have reactive hypoglycaemia, where your blood sugar dives if insulin is produced in response to a stimulus like eating sugar.

    what about some homemade beef jerky with no sugar in it? Or olives or something else that's mostly fatty. I'm assuming you'll have no access to refrigeration? That makes it tougher. You could also do nuts for breakfast.

    If I eat sugar, it makes me crash hardcore. For some reason it's twice as bad in the morning. Even eating yogurt usually makes me crash. I get super shaky and feel faint.

    Eating nuts does sound like a good idea. Hmm!!

    I'd just go with the quinoa, and cook it with water. If you're camping for that long, I assume you'll bring something to cook water for coffee and tea. Cooking quinoa flakes doesn't take much energy. Alternatively, before you leave try to make and eat these, to see if it works for you:

    2 cups of Quinoa flour
    1 cup tepid water
    1,5 tablespoon olive oil
    a little salt
    herbs of choice

    mix until a thick dough, make a firm, but not hard roll. cut this into small balls, and press them flat by hand (size optional, large cookie size is probably good.) You want a very thin, flat cake.
    Bake them for 3-4 minutes with no fat on each side on a skillet or frying pan. They are supposed to be crisp, dry and golden.

    I have to admit I have never made these with quinoa, but the recipe I have translated says that is an option. It also points out you should adjust flour/water until the dough has the right consistency.

    If this works for you, these can keep for a short while, so you can bring a little stack in a box and have food for at least the start of your stay. That should make your trip easier!

    Make something ahead of time. You said eggs are fine for you in the morning? Look up some breakfast egg muffins or crustless quiche recipes. Or boil eggs in water if you feel like it. I'm sure there's something similar you can do with quinoa so you can have a precooked quinoa pattie and an egg for breakfst?

    How about hard-boiled eggs? Easy and portable. You can make them ahead of time, too.
