1 oz. baked tortilla chips(about 20 chips)
3 oz. Jennie-O-turkey Store Extra Lean Ground turkey
2 Tbsp. canned fatfree refried beans
1Tbsp. reduced-fat nacho cheese sauce
2 Tbsp. salsa, drained if watery
1 Tbsp. fatfree sour cream
1 tsp. minced chives
Arrange the chips in a medium shallow bowl .. Set a small skillet over medium-high until hot .. spray pan with olive oil spray.Add the turkey Cook 3-5 minutes or until no longer pink(I add ms dash southwest seasoning before cooking) . Reduced the heat to low ... stir in beans . Meanwhile, spoon the cheese sauce in a bowl and microwave on low power in 15 second intervals until it is warm.... (if you cant find reduced nacho cheese sauce you can use fat free cheddar) . Spood the turkey mixture evenly over the chips .. Drizzle on the cheese sauce. Spoon on the salsa and sour cream . Sprinkle on the chives .
MAKES 1 SERVING
Per serving: 285 calories, 28g protein, 35g carbs, 4g fat(less than 1g saturated), 37mg cholesterol,4g fiber,522mg sodium
