What are the best exercises to thin the calves?

while Brenda is correct, you can't spot reduce, a lot of times calf muscles can be lengthened by doing a couple of things. First know that there is no quick fix to lengthening and defining muscle tone, so expect this to take at least about 6 months, but you can do stretching exercises to extend your calf muscles, like mountain climber stretches. Google calf stretches for a whole host of routines. Also yoga and pilates will help stretch and elongate the legs as well.0
