What are some of your favorite Easy Fast Recipe(s)?

I made a pretty yummy sandwich last night for dinner from leftovers and I was impressed with the final result.

It was on a small roll and had a cold chicken breast, homemade pico de gallo and a tsp. of mayo..only thing that I thought is was missing..some advacado.
