Seeing results and weight loss

Hello everyone! I have signed up to run a 5k on August 5th, and my boyfriend has me on this super strict workout routine. As of right now here's my schedule, and it will gradually increase up until August:

Monday:
Tabata Method (100% Sprint for 20sec/ Rest 10 sec - repeat 8x)
Treadmill - run 5.5mph at 1.5 incline for 1 mile
Treadmill - run 5.5mph at 12 incline for 1 minute - repeat 3x.
Elliptical - 30 minutes
Abs

Tuesday:
Treadmill - run 5.5mph at 1.5 incline for 1 mile
Treadmill - run 5.5mph at 12 incline for 1 minute - repeat 3x.
Abs
Leg Press - 90% of max weight 3 sets of 5
Bench Press - 90% of max weight 3 sets of 5

Wednesday:
Same as Monday

Thursday:
Same as Thursday

Friday:
Tabata (100% Sprint for 20sec/ Rest 10 sec - repeat 8x)

Saturday:
Light jog around neighborhood

Just some history. I've never been a long distance runner. EVER. I was always a sprinter. So from going to running half a mile to 3.1 miles is crazy. Crazy in my mind anyways. I can barely even run 1 mile on the treadmill because my lung capacity (VO2 max) is pretty low. I also want to lose 25-30lbs. I'm currently fluctuating from 173-178lbs and I want to get down to 140-145.

Anyways my question is, how soon will I start to lose weight? Right now I've been working out hard for 2-3 weeks and I have not lost ANY weight. I eat pretty healthy and I don't over endulge. You think I replaced fat with muscle with all the weight lifting I have been doing? I also think I need to eat a healthier breakfast and drink more water. I probably drink 4 cups a day right now.

Any feedback or shared experience is greatly appreciated!
