Protien Fats and Carbs

I spent my twenties certain as heck that I knew what a healthy diet was; lots of whole grains, minimal cholesterol, and a variety of veggies. The past few years my head has been spinning. My understanding of cholesterol, carbs (grains for that matter) has done a near 180. What is your take on saturated fats and grains?
From what I have been reading as of late, my prior diet that was extremely low in saturated fats and high in grain could have been contributing to my life long struggle with depression. I put on 20lbs over the past year (divorce sucks) and am now focusing on my health again. How are you approaching your breakfast? I keep reading where people are only eating egg whites but the link between mood disorders and diets low in saturated fats speaks some truth in my experience.
