Looking for a Large crowd dinner/sides/dessert...

We're going to the lake this weekend for 4th of July. Each couple is in charge of one meal. I have Friday night.
It's supposed to feed 12 people. Does anyone have any good ideas?

Cheap, fast, as well as filling and low calorie would be amazing!!

  • I did fajitas for 8 last week for a sailboat racing event and it was a hit! To feed 12 I would buy about 6 lbs of chicken breasts and cut into strips, saute with spice (cumin, chili powder, chipotle...whatever you're in to) and lime. Separately, I sauteed different colored bell peppers, mushrooms and onions with their own spices and some soy sauce. I did all this the night before and put them in two 9 x 13 casserole pans. When it was ready to serve, I placed the pans on the grill (they were aluminum) to heat and just served up with tortillas, sour cream, salsa and shredded cheese. Super easy and make ahead!
