Oatmeal In Baked Goods

Everytime I bake muffins using oatmeal, it seems to give my muffins an eggy moist texture no matter what recipe I use. In my opinion muffins are suppose to be like a cupcake but more dense. I have tried grinding the oats into flour but I get the same results. Anybody else have this problem or am I doing something wrong. Thankyou
