Lunch and Snacks

I'm in need of some new ideas for lunch and snacks. I do a lot of veggies and dip, hummas and pitas, turkey sandwiches but I'm needing a change. Anyone have some new different ideas?

    I just made homoade egg drop soup. I HATE the kind at the chinese resturant but I found a really easy recipe that sounded good so I had to try and and WOW! I love it! Ive had it for lunch 2x this week and for breakfast one day! Its delicious and totally sippable. Its only 160 calories and it makes enought to fill you up! Ill post the recipe if you are intrested!

    I made taco soup for dinner last night and brought some leftovers in a bowl to reheat at work with a single serving size of tortilla chips. Simple, quick and easy!

    1 can light red kidney beans
    1 can pinto beans
    1 can whole kernal corn
    1 can rotel
    1lb lean ground beef/turkey
    2 packs low sodium taco season
    1 pack ranch dressing powder
    1/2 medium diced onion (cooked in with ground meat)
    season with garlic, zaterans, salt, pepper or whatever you chose
    cook and drain meat, dump in all cans (do not drain) add season packs stir bring to a boil and simmer 20 minutes.

    I put it into the recipe builder and it it 240 cals and i put it in at 8 servings, which that makes big servings =)
    You can add sour cream and low fat shredded cheese but add your cals to it.
    I simply eat mine with tortilla chips and LOTS of jalopenas.

    we all get to where we need new ideas! i get tired of a sandwich myself but i don't like lugging a big meal to work so I like something light and filling =)

    I don't know if you like avocado, but I am hooked on avocado chicken salad. I take about 4 oz of a grilled chicken breast and shred it, then I take a 1/2 of an avocado (they are high in fat....but it is good fat) and I cube it up. I mix it together, add a little lime juice and a little salt and pepper. I eat it on a Thomas Whole Grain Bagel thin with some lettuce and tomato, It seriously yummy!!
    But again, you have to be an avocado fan to love it.

    I wouldn't have even thought of avocado chicken salald but it sounds delish! You Ladies are on the ball with your lunches.

    That taco soup sounds tasty and I'd love to have the egg drop soup recipe. I'm such a recipe junky.

    I like to make a corn and black bean salad for lunch. You can add whatever but I add onions, celery, tomatoes, little evoo,cilantro, sometimes avacado or feda. Also for snacks I like Eddy's All Natural Fruit Bars (90 calories), boiled egg whites, watermellon, a few almonds, greek yogurt....Hope this helps.

    A snack that I've been eating is a rice paper wrap filled with cucumber and carrots wrap it up. Dip in light peanut sauce. The rice wraps are so thin and the veggie wraps are so quick to make.
