Only 133 calories per HUGE FILLING serving! (5 fat, 5 carbs, 14 protein, 4 iron if you make it as below)
To really serve 4!: 4 eggs, 500g lite cottage cheese, 3 rashers Tegal chicken bacon, vegetables of personal choice. ((of course you can do vegetarian or whatever...great way to use up leftovers & whatever vege are lying about in the fridge ...and you can make a smaller dish using just 250g cottage cheese with 2 eggs :-)))
Briefly cook onion, bacon and veges in a pan. Meanwhile, whisk eggs. Add salt & pepper if desired. Stir in cottage cheese. Add vegetables (and any other leftovers you can find). Pour into dish (line with baking paper is a great idea). Back 30-45 minutes at 180 degrees celsius. I do find you need to drain a little of the excess fluid off. Serves 4 (biggish filling servings!)
