A Coronation Chicken recipe, please?!

Hi,

I've just been asked to bring a Coronation Chicken dish to a picnic this weekend, and wondered if anyone has a recipe that is less-than-disastrous in terms of calories, but still tastes good? Ideally one that the majority of those consuming won't realise has had substitutions...

Anyone?

    They suggest half mayo and half creme fraîche to lower the calories, but I find using less mayo in general is nicer and chutney has fewer calories than mayo too, so can boost with that as well. I also use light mayonnaise as you can't really notice the difference when it's mixed with the creme fraîche.

    I mix roughly 2tbsp of low fat mayo and 2 tbsp of low sugar apricot jam and a tsp of curry powder, so tasty!

    Substitute the creme fraiche for low fat Greek yougurt :bigsmile:
