Mom's homemade Cabbage Soup

This is a recipe my Mom used to make for us as kids. It was a staple for Polish and Russian families especially during the depression. I found out that it is incredibly low calorie (thanks to this website) and it is incredibly delicious and filling. This recipe works out to be about 75 calories per cup so you can eat 4 cups of soup for around 300 calories.


Farmer John - Thick Cut Bacon, 1 container (12 slice {12 g}s ea.)
Cabbage - Raw, 1 head, medium (about 5-3/4" dia)
Potatoes - Russet, flesh and skin, raw, 4 Potato medium (2-1/4" to 3-1/4" dia)
Better Than Bouillon - Chicken Base, 4 tsp (6g)
Claussen - Sauerkraut - Premium Crisp, 32 oz
Mushrooms - Raw, 12 medium
Caraway seed, 3 tbsp

Cut the bacon into pieces and fry in the pot till crisp, then add mushrooms and cook for 5 min and drain the juice. Then add cabbage and sauerkraut and cover with water. The cabbage will cook and you will notice it will shrink and it will look like more water was added but it is just the cabbage reducing. Add the potatoes and the chicken base with 3 tablespoons of caraway seeds and a little salt and pepper to taste. Bring to a boil and cook for about 20 minutes or until the potatoes are tender.

Even if you think you do not like cabbage you will be amazed on how good and filling this is. I am making a pot a week and i get quite a few meals with it.
