Salads DON'T have to be boring!

I have to share this salad I made last night for my husband - and is my lunch today. I may be in LOVE with the flavors of this salad...

4 oz. chopped Grilled Chicken (ours was in the fridge in the same ziploc with smoked bison brats - which gave a smoky flavor to the chicken)
1.5 cups of Romaine Lettuce
1/4 cup fresh blueberries
1/2 chopped pear
1-2 TBSP Mayo (with olive oil) (or use a different dressing of your choice)
Nuts of your choice (I used what I had - almonds and dry-roasted peanuts)

Toss the dressing with the chicken, fruit and nuts, and serve on a bed of greens - and enjoy!

While this one is great, I also love the shrimp cobb (with cilantro lime dressing) from SkinnyTaste.com, Chicken BLT Salad, and Texas Caviar-Salad Style (with beans, loads of veggies and fresh cilantro).

What is your favorite salad?


(The reason for the title: A woman I work with, has been complaining that salads are so boring, and that she is SICK of them. However, her idea of a salad is iceberg lettuce, tomato, shredded cheese, a hardboiled egg, and loads of western dressing.

I can certainly see how that can become boring - but like with anything else, your meal is only as boring as you make it. A little creativity goes a long way in the kitchen! )
