Carrot Soup

This is for all the soup lovers out there. My 2 and 4 year olds love this soup.

1 tbsp of light margarine (trans fat free)
1 cup finely chopped onions
3 cups thickly slice carrots
4 cups chicken stock (or veggie stock)
2 tbsp tomato paste
2 tbsp long grain rice
1/2 cup 1% milk
1/4 tsp of black pepper
2 cups of water

1. In large pot, melt margarine over medium heat. Add onions and cook until soft. Add carrots, stock, paste and rice; reduce heat and simmer for 30 minutes (or until carrots ar soft).

2. In a food processor or with a hand blender, puree soup in batches until smooth ( I use hand blender directly in pot). Stir in milk and pepper. Add water.
Heat until warmed through.

Makes 8 cups.
