Chocolate Chip Cheesecake Cookie Bites

Hey guys! So I decided to experiment in the kitchen today and came up with the most delicious cookie I've ever made, Chocolate Chip Cheesecake Cookie Bites! Yum! (And only abut 60 calories each :D).

Here's how to make your own:

(Yields about 8 cookie bites)

3/4 cups oatmeal (I just used instant unflavored oatmeal)
1/4 tsp baking soda
1/8 tsp salt
2 Tablespoons brown sugar
2 Tablespoons chocolate chips (I used semi-sweet dark)
1 Tablespoon and 1 tsp white sugar
1/8 cup lightly sweetened apple sauce (it replaces oil or butter)
2 table spoons almond milk
1/4 table spoon cinnamon
1/4 table spoon vanilla extract
1.5 table spoons nonfat/sugar free Cheesecake flavored pudding mix (Jell-o brand makes a yummy one!)


Blend the oatmeal, brown sugar, white sugar, cheesecake jello powder, salt, and baking soda together in a blender or a food processor. Mix the rest of the ingredients into the dry mix (in a bowl). Bake at 375 for about 10 minutes.

Note: The pudding mix is going to create a soft texture in the center of the cookie. It should be smooth and slightly firm...not dry!
