Tomato Chicken

This is a 9 step easy and healthy dish to cook. Good for lunch or dinner. About 15 mins for prep time and 20 mins to cook. Tomato Chicken was surprisingly delicious the first time I tried it. I hope you enjoy this meal as much as I did!

This recipe will make 3 servings.

Per Serving: Calories: 370; Carbs: 56; Fat: 6; Protein: 24;

Total: Calories: 1109; Carbs: 169; Fat: 17; Protein: 73;


Ingredients:
Campbell's - Tomato Soup , 1 3/4 cup - 120ml (1 Can)
Thin Sliced Chicken Breast, 3 Breast Piece
Broccoli, 1 cup chopped
Fresh Green Beans, 1 cup
Baby Carrots, 1 Cup
Instant Boil in a bag White Rice, 1.5 cups
Olive Oil 1 tbsp

Directions:
Prep Time (about 15 minutes):

1) Rinse and cut up all your vegetables, Cut baby carrots into thirds, cut green beans in half, cut broccoli with/without a stem (however you like it).

2) Rinse chicken and cut into thin slices, you want them to be thin strips, think of the size of a McDonald's French Fry but, a little bigger.

3) In a deep skillet add 1 Table Spoon of Olive Oil and heat (should only take a minute or two).

Cook Time (about 20 mins):
4) Once Oil is hot enough to cook on, adjust to low - medium heat and add chicken. Let the chicken turn white on most sides ( should only take 1-3mins).

5) Add vegetables, Then Tomato Soup. Stir so Tomato soup is mixed in with most of the food. Don't go crazy with it, this should be no more then a minute of stirring.

6) Cover skillet and reduce heat to low. Cook for 20 mins, stir only once half way through around 10 mins, you want the cover to stay on as much as possible.

7) While chicken and Vegetables are cooking, begin cooking White Rice follow instructions on instant boil in bag box. Very easy to cook, usually add water to a pot and boil for 10 minutes. Rice should be done cooking before chicken and vegetables finish cooking.
***NOTE: I used an Instant Boil-In-Bag White Rice, I just find it easier to cook and its quick. One bag is 1 cup, for this meal since it's 3 servings you need to make 2 bags each plates gets 1/2 cup of rice(in other words, half of one bag for each plate). This only takes 10-15 minutes to cook.

8) The white rice should finish about 5 mins before the chicken and vegetables, drain rice and put half of each bag on separate plates. You should have a half bag extra.

9) After 20 mins of cooking the chicken and vegetables it should be ready, check vegetables to be soft to your liking. Remove Heat, stir and serve over rice.
