Acorn Squash

I like to cut them and half and just bake them with a little cinnamon or nutmeg. You can use the roasted squash just like pumpkin so you can make soups or anything from it. Add a little brown sugar to make it into dessert or leave it off for more savory dishes.0

I do the same as Amy, but I drizzle a little honey before baking, which I suppose you can add with the cinnamon when it is done. I was just trying to use something besides butter. Gently blend and enjoy! It is great! I tried the same with butternut squash and it tastes just as good!0

I love squash! Just a little tip, if you need it to get done more quickly or don't want to burn the oven you can 'nuke' it and it tastes just as good (IMO). I only put butter, salt and pepper in mine. To microwave it you need to stab it a few times like a potato, or you can cut it in half, scoop out the seeds and put it meat side down in a bowl. I would still stab it a few times, first though. You just nuke it until it's squishy! I also do this with pie pumpkins for my dogs, they love pumpkin mixed in their kibble :laugh:0
