I make pulled chicken and the family loves it.
Just grill your chicken, I use thighs and breast
pull the meat and add a small amount of your favoite bbq sauce. I only add a little and let guest add more if they want.
It is a lot less calories then pulled pork.

    - grilled veggies on skewers, try making skewers of onions, peppers, cherry tomatoes, zucchini, mushrooms, and whatever else you can think of. Make it fun by having a "veggie skewer" station where people can make their own (the REAL fun starts when you try to remember whose is whose!)

    - vegetarian hot dogs taste the same (to me at least), they can be grilled, and they are waaayy healthier than regular hotdogs.

    - barbecue hamburger minis or "sliders" instead of full-size hamburgers and then the diet-conscious can just eat one or two and the rest of the people can do whatever they want

    - skip the potato salad and coleslaw and have green salads, chopped salads, or just crudites. Make it festive by cutting the crudites into neat shapes or serving them with interesting dips.

    - skip the bread on the hamburger and eat it like a salisbury steak on your plate, you can also exchange the bread for large pieces of lettuce and do lettuce-wrapped burgers.

    - skip the cake for dessert and serve fruit salad with fresh mint in it (and if the kids aren't around, add some orange liquor too!)
