Quinoa and Black Beans

This is FANTASTIC:flowerforyou:


INGREDIENTS


1 teaspoon vegetable oil
1 onion, chopped
3 cloves garlic, peeled and chopped
3/4 cup uncooked quinoa
1 1/2 cups vegetable broth
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
salt and pepper to taste
1 cup frozen corn kernels
2 (15 ounce) cans black beans, rinsed and drained
1/2 cup chopped fresh cilantro






DIRECTIONS
Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.
Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,
Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.

    I found an identical recipe that had a pic! So, I stole the pic! :laugh:
    I need to use this grain sometime... I keep shying away from trying new stuff!

    It's really good! No flavor, looks like fish eggs as my kids say, but you make it to taste like whatever.:bigsmile:

    I love quinoa! This would be a really good make ahead lunch to take for those who work.

    I really love quinoa, it's sooooo good for you.

    It's about 15% protein and contains all 9 essential amino acids. Vegans/Vegetarian, this is a grain that is a true and complete source of protein!

    Funny thing is, I first heard of quinoa as an ingredient in holistic dog food...but I like it better than my dog ever did. :tongue:

    I'll have to post a recipe I have for some Mexican quinoa soup. :bigsmile:
