Protein power muffin
Here is another recipe I discovered on Pinterest I thought would be useful to some of you
Ingredients:
1/4 cup of your favorite protein powder
1/4 cup ground flax seed
1/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp liquid stevia, more to taste (I used blue agave nectar)
5 tablespoons of water
I added some shredded zucchini and nuts and it tasted like zucchini cake
Directions:
Preheat oven to 350 degrees
Mix all ingredients together, but add the water last. batter will be REALLY thick.
Place in muffin tins (I also used cupcake wrappers)
Recipe states bake for 20 minutes, but I baked for about 25 because 20 didn't cook them all the way through
Makes 2 muffins!
