Hi everybody. My name is Jay and I am a 38 year old mother. Last week I started my very serious weight loss journey. I have struggled with my weight most of my life, but was never considered obese. After becoming disabled and over the course of two years, I packed on a whooping 55 lbs! I went to the doctor last week for a physical and my cholesterol, blood pressure and weight are out of control. Since such ailments such as diabetes, high blood pressure, obesity and heart disease run in my family, I decided that I need to do something about my situation immediately.

Anyway, I re-joined my gym (so far, I have lost 6 lbs) and decided to rekindle my love of non-meat foods like fruits, veggies and tofu. I threw out all of the junk food in my house. My frig is packed with healthy fresh foods. So, I just wanted to introduce myself and wish everyone else well on their healthy living journey.

    hi jay welcome to mfp do you have any good tofu recipes i like mine fried like a french fry and deep in ranch it good but it might be the reason im a hundred pounds over weight i just need something more healther than that and just as good

    Hey Lizzys,

    My favorite tofu recipe is baked or grilled. I usually get the extra firm tofu. I drain and dab in a paper towel to get the excessive liquids out. I slice the tofu into 8 slices. Then I season it with a light mixture of olive oil and Old Bay seasoning. Then I just pop it in the oven or throw it on a grill until they are golden brown and the consistency is to my liking.

    You can add different variations of the seasonings. But the Old Bay and olive oil really brings out a nice flavor to it. Try it and let me know how you like it. Another good recipe I found was on the VitaSoy website. Tofu Scramble is so yummy.


    Tofu Scramble
    Ingredients

    1 lb. Nasoya firm tofu, drained and cut into 16 cubes
    2 Tbs. vegetable oil
    3 cups grated carrots (about 4 medium)
    1 Tbs. curry powder
    1/2 cup chopped scallions, white and pale green parts


    Preparation

    1. Squeeze tofu gently but firmly, working with one cube of tofu at a time over sink, until it crumbles slightly and water drips out. Put in mixing bowl.

    2. Heat oil in large skillet over medium heat. Add carrots, and cook, stirring often, 5 minutes, or until tender.

    3. Stir in curry powder, and cook, stirring, 1 minute. Add tofu, sprinkle with salt to taste, and cook, stirring, 3 minutes, or until evenly golden and firm. Add scallions, and cook, stirring often, about 1 minute. Serve.

    both of those sound really good im going to try grilling it frist than the curry i have been meaning to pick some up at the store curry is one of the heathy spices
