Ingredients:

2 poblano peppers
8 oz ground bison
1/2 cup chopped onion
4 cloves garlic, chopped
2 cups chopped baby spinach
1 cup chopped cilantro
6 oz Jarlsburg swiss cheese, grated
1 Tbs Thai Kitchen red curry paste
1 jalapeno pepper, seeded and chopped
10 sundried tomatoes, chopped
1 portobella mushroom top, chopped


method:

broil the poblano peppers 5 minutes on each side, cool and remove the waxy skin. Pull out the stems, slice and unwrap, remove the seeds.

Pulse the spinach, mushroom, cilantro, curry paste, tomatoes in a food processor until finely minced.

Brown the bison, add jalapeno, onion and garlic until the onion is tender.

Add the processed ingredients, cook a couple of minutes.

Oil a small oven proof dish.

Layer:

1 poblano
the bison and vegetables
1/2 the cheese
1 poblano
1/2 the cheese

bake at 325 until bubbly, about 25 minutes

Serves 2 as a meal, 4 as an entree

    sounds good :)

    Never had bison...not sayin I wouldnt try it, but I might sub beef my first time making something like this.
