Some good ideas. I just hit it with some EVOO, oregano and garlic and bake it in the oven. mmmmm0

I top it with 1 c. diced yellow summer squash, 1/2 c. pitted Rainier cherries, a sprig of fresh tarragon, 2 tsp. of white wine vinegar, and a dash of salt, wrap all in parchment paper and foil and bake at 400 for 20 minutes. It's easy, quick, and delicious - especially this time of year when the cherries are in season.0

I actually saute it in a pan with enough olive oil as to not stick and add Schillings taco seasoning with just a little water and it is great for fish tacos. My sons love it!0

I save the tilapia for when we need a quick meal or forgot to take some meat out. You can throw the frozen fillets right into the oven at 425 for 22 minutes and they come out perfect. Just sprinkle with lemon juice, lemon pepper and paprika.0
