Prawn & Veg Noodle Soup
I love this recipe - it's filling because there's so much veg in it and it makes me feel healthy eating it! This would feed 3 normal people, or 2 greedy people like me!
1tbsp olive oil
4 spring onions, shredded
2 garlic cloves, crushed
1 carrot, sliced into thin strips
75g sugar snap peas, halved
75g mangetout, halved
1 red chilli, thinly sliced
1 litre vegetable stock (I use 2 Oxo reduced salt stock cubes in 1l water)
1 tsp Chinese five-spice powder
2 portions of dried noodles
2 heads pak choi (or ½ head Chinese leaves), shredded
200g cooked peeled prawns, thawed if frozen
Black pepper, to taste
I would have all the ingredients prepared before you start cooking as this doesn’t take very long at all!
Heat the oil in a wok, add the spring onion and garlic and cook for 1-2 minutes.
Add the carrot, mangetout, sugar snaps and chilli. Stir and cook for another 2 minutes.
Pour in the stock and add the Chinese five-spice powder. Bring up to the boil, then reduce the heat. Add the noodles and cook for 5 minutes.
Finally, add the pak choi and prawns and cook for 2-3 minutes.
